Pumpkin Brownies

Crust:

1 package yellow cake mix
½ cup butter or margin
1 egg 

Filling:

1 can pumpkin pie filling
2 eggs
2/3-cup milk
1-teaspoon cinnamon
1-teaspoon ground ginger
1-teaspoon nutmeg
1-teaspoon salt
¾ cup sugar

Topping:

1 cup reserved cake mix
¼ cup sugar
1-teaspoon cinnamon
¼ cup butter

Directions:

Preheat oven to 350 degrees.
Grease a 13-by-9-inch pan.
Reserve 1 cup cake mix.

Prepare the crust by combining the remaining cake mix, the butter or margin, and the egg. Press into pan.

Mix all filling ingredients until smooth. Pour over crust.

Combine all topping ingredients. Sprinkle over filling.

Bake at 350 degrees for 40-50 minutes or until a knife inserted near the center comes out clean.

Optional: Top with whipped topping.

Apple Cider Punch

4-cup apple cider
2 -cup cranberry juice
1- cup orange juice
1 12ounce can apricot nectar
1-cup sugar
2- sticks cinnamon

Heat and let simmer 20 minutes. Top punch bowl with floating orange slices decorated with cloves. Serves 20 to 25.
