Ozark Pie

The recipe uses an 8" square pan but I always double it and use a 9" X 13" pan.

1 Egg
3/4 Cup Sugar
1 Teaspoon Vanilla
1 to 2 Cups Diced Apples with the peels left on
1/2 Cup Nuts (Walnuts or Pecans, chopped)
1/2 Cup Flour
1 1/2 Teaspoon Baking Powder
1 1/2 Teaspoon Cinnamon (optional)

Beat egg, sugar and vanilla. Mix dry ingredients and stir into egg mixture. Stir in apples and nuts. Pour into pan. Bake at 350 degrees for 30 minutes. Serve warm or cold.

When using as a dessert I top with whipped cream. When I plan to use this as a coffee cake I sprinkle the top with cinnamon suger before baking.
