Un-Recognizable Left-over Turkey

Our son Eric created this when he was about 15 and it has been a family staple ever since. ~Teddi

Ingredients:
Left -over cooked turkey
1 onion. chopped
garlic to your taste preference
cilantro 1 or 2 pinches
Pace's picante or whatever is on sale
Shredded cheese, we like sharp cheddar
Tortilla Chips the broken bits in the bottom of a couple of bags works well.

De-bone and dice left over turkey. Saute onion, garlic and cilantro. Stir it into the turkey. In a 9x13 pan place a layer of tortilla chips, then turkey, then picante, then cheese. Repeat these layers until you run out of something. It is best to end with a layer of cheese on top.

Bake at 350 about 40 minutes. Allow to set about 10 minutes before serving.

Left over chicken, beef or pork also works well in this.

Breakfast Cookies

This was the breakfast of choice around our house when the boys were home. It doesn't get neglected now either.

This recipe makes a huge batch of cookies. Because the ingredients are even it is easy to make a half batch. Generic or store brand cereal works great. I have substituted and eliminated nuts, coconut, and chocolate chips. I have reduced the sugar at times and I have made these using butter, margarine, or shortening. and they still taste great.

2 C. shortening (I soften it in the microwave)
2 C brown sugar (packed)
2 C white sugar
4 eggs, beaten
2 tsp. vanilla
4 C flour
1 tsp. salt (if you want)
1 tsp. soda
2 tsp. baking powder
2 C quick oats
2 C flake cereal
2 C krispie cereal
2 C chopped nuts
2 C coconut
12 oz. chocolate chips

Cream shortening and sugar. Add eggs and vanilla. Beat well. Sift together flour, salt, soda, and baking powder and add to mixture. Stir in cereal, coconut, nuts, and chocolate chips. Drop by teaspoon onto a greased cookie sheet. Bake 10 minutes at 350 degrees.

Quick Herb Bread

1 box Jiffy Corn Muffin Mix
1 cup of flour
1 tsp baking powder
1 cup milk
2 eggs
1 tbs. oil
*1/4 cup parmesan cheese,
*1/2 tsp. Italian seasoning or Sweet basil
*1/4-1/2 tsp. garlic powder
***These may be exchanged for 1 package taco seasoning mix and 1/2 cup of cheddar cheese
(Fried chopped onions added to this bread is a very tasty change.)
Preheat oven to 400
Mix all in a bowl (don't over mix)
Put in a greased heavy iron skillet or 9" pan
Bake till brown on top...15-20 minutes.
