Un-Recognizable Left-over TurkeyOur son Eric created this when he was about 15 and it has been a family staple ever since. ~Teddi Ingredients: De-bone and dice left over turkey. Saute onion, garlic and cilantro. Stir it into the turkey. In a 9x13 pan place a layer of tortilla chips, then turkey, then picante, then cheese. Repeat these layers until you run out of something. It is best to end with a layer of cheese on top. Bake at 350 about 40 minutes. Allow to set about 10 minutes before serving. Left over chicken, beef or pork also works well in this. Breakfast CookiesThis was the breakfast of choice around our house when the boys were home. It doesn't get neglected now either. This recipe makes a huge batch of cookies. Because the ingredients are even it is easy to make a half batch. Generic or store brand cereal works great. I have substituted and eliminated nuts, coconut, and chocolate chips. I have reduced the sugar at times and I have made these using butter, margarine, or shortening. and they still taste great. 2 C. shortening (I soften it in the microwave) Quick Herb Bread1 box Jiffy Corn Muffin Mix |
