Mrs. Ratje's Rolls

1 pkg. dry yeast
2 C plus 2 T lukewarm water
2 beaten eggs
1/2 C vegetabel oil
1/2 C sugar
1 t salt
4 C all-purpose flour

Dissolve yeast in water. Add eggs, oil, sugar and salt. Blend well, then add 2 cups flour. Beat until smooth, then beat in 2 more cups flour. Continue beating until very smooth. (This will give your hand mixer quite a workout!) Place in greased bowl. Cover
and refrigerate overnight. In the morning, divide dough in half. The dough will be VERY sticky. You will have to use lots of flour. Roll each half into a 16 inch circle. Cut into 16 small "pie" shapes. Roll each from big end to little end--like a croissant. Let rise approximately 3 hours on greased pan. Bake at 375 degrees until done, about 12 to 15 minutes. Can be made very early in the morning for a late evening meal if pressed for time.
Yield: 32 rolls
This, and almost any bread recipe, can be put in your bread machine on the dough cycle. Run it on the dough cycle, then refrigerate (in a bowl--it will be too big for the bread machine pan) overnight.

Crockpot BBQ Chicken

4 boneless, skinless chicken breast halves
1 1/2 cups ketchup
3 T brown sugar
1 T worchestershire sauce
1 T soy sauce
1 T cider vinegar
1 t red hot pepper flakes
1/2 t garlic powder

Mix all but chicken in the crockpot. Add chicken and coat well. Cook on high 3-4 hours, or until chicken is falling apart. Shred chicken and return to sauce.
Serve on fresh rolls.

Hamburger Tater Tot Casserole

1 or 2 lbs. Hamburger
1 onion
Velveeta cheese (or I use any shredded cheese)
1 can cream of mushroom soup
1 1/2 C milk

Brown hamburger and onion and onion. Drain. Put in large casserole dish. Add slices of velveeta cheese (or shredded cheese) on top of all the hamburger. Add 1 1/2 c milk to i can of mushroom soup and put over cheese. Cover with Tater Tots.
Bake at 375 degrees for 45 min.

I have made this for truck drivers and they have raved about it.

Chicken Casserole

1 chicken cooked and boned (2-3 cups) I usually will put the chicken in my slow cooker and cook it that way. It seems to come off the bone easier.
1 pkg. of dressing mix. (Fix according to direction on box)
1 c chedder cheese
1 can cream of mushroom soup
1 can water or broth

Moisten dressing mix with broth or water. Place in a large casserole dish. Put chicken on top of dressing. Covber with cheese. Combine soup and water and Pour over the casserole. Chop down thru to mix thoroughly.
Bake for 1 hour at 350 degrees.

Note: You can add pre-cooked broccoli or asparagus for variation to the casserole.
