Chocolate Chip Cookies

From Sharon Merhalski

This recipe is excellent!  It makes a huge batch of cookies...approximately 6-7 dozen.

4 1/2 cups flour
2 tsp. baking soda
1 tsp salt
Set aside in bowl.

In larger bowl combine:
1 cup (2 sticks) margerine, softened
1 cup vegetable shortening
1 1/2 cups white sugar
1 1/2 cups brown sugar
2 tsp. vanilla

Beat until creamy.

Beat in 4 eggs.

Gradually add flour mixture.

Stir in 1 (yes 1 is plenty) 12ounce bag (2 cups) real semi-sweet chocolate chips.

(I often add a small bag of butterscotch chips or toffee chips to this)

Bake 375

Meatballs

My mother-in-law is Italian and she sent this to me shortly after her son and I were married.  She wanted to make sure I could cook Italian for him.  This is a recipe that has been proven to be a favorite with everyone who has eaten these meatballs.  ~~Sharon Merhalski

Makes 25 good sized meatballs.

3/4 lb. ground beef
1/4 lb. ground pork
(or 1 pound ground beef)
1 cup fine dry bread crumbs
1 tbs. chopped parsley (I use dried)
1 clove garlic minced
1/2 cup milk
2 beaten eggs
1/2 tsp. salt
dash pepper

Combine all ingredients, mixing well.
Form into meatballs and put on cookie sheet.
Bake 350 until meatballs are brown--approx. 20 minutes.

Put in large pot and add spaghetti sauce.  Simmer for 30 minutes or more to blend flavors.

Strawberry Cake

My adult daughter says this is 'her' birthday cake...but agreed to share.  It is so moist and  yummy!  Add dollaps of cool whip to the top and a few fresh strawberries and it is a winner every time.

1---20 ounce white cake mix
1---3 ounce strawberry jello
3---tablespoons flour
4---eggs
1---cup of oil
1/2--cup water
1---10 ounce box frozen strawberries drained....SAVE JUICE

Put all ingredients in a bowl.  Mix with spoon first then beat with mixer at medium speed for 3 minutes.

Put into sprayed and lightly floured tube pan and bakd 350 for 55 minutes.

Mix left over juice with 1 1/3 cup powdered sugar--drip over the cake when cool.
