Carrot Cake

2-cup cake flour
2 tsp soda
2 tsp cinnamon
2-cup sugar
1 tsp salt
11/2-cup peanut oil
4 eggs
3 cup grated carrots

Mix all dry ingredients with oil, add eggs 1 at a time, and beat well. Add carrots and stir.
Bake at 350 degrees for 45 minutes.
Cool and ice with cream cheese frosting.

Fudge Cake Cookies

1 pkg. Devils food cake mix
2 eggs
½ cup oil
1-cup semi-sweet chocolate chips (or you could use peanut butter chips)

Mix cake mix, eggs, and oil until creamed. Then stir in chips mixture will be stiff then shape into teaspoon balls place on cookie sheet 2in apart and bake at 350 degrees for 10-12 minutes.

Nutty Apple Dip

1- package (8 ounces) cream cheese, softened
¾-cup packed brown sugar
¼-cup sugar
1-teaspoon vanilla extract
1- cup chopped nuts
Apple slices or wedges
In a small mixing bowl, combine cream cheese, sugars and vanilla; beat until smooth. Stir in nuts. Serve with apples. Yield: 2 cups.

Quick Cheese Ball

1- package (8 ounce) cream cheese, softened
1- jar (5 ounce) Old English cheese spread
1- jar (5 ounce) Roka-blue cheese spread
1- teaspoon Worcestershire Sauce
1- cup chopped nuts or chopped bacon
Cream the cheeses together with the Worcestershire sauce form into a ball and roll in the nuts or bacon put into bowl and cover. Refrigerate until you are ready to serve.
