Mediterranean Pasta Salad with Basil Vinaigrette

Basil Vinaigrette
4 large cloves garlic
2 T dried basil
1 1/2 t sugar
1 T dry mustard
3 T fresh lemon juice
6 T red wine vinegar
2-3 t salt
1-2 t ground pepper
1 1/4 C olive oil

1 zucchini, diced 1/2 inch
1 yellow squash, diced 1/2 inch
12 oz. dried fusilli
3 C cooked chicken breast, cubed
2 medium tomatoes, diced
3 green onion, thinly sliced
sliced black olives
1/4-1/2 C paremsan cheese

In food processor or blender, mince garlic. Add basil, sugar, mustard, lemon juice, vinegar, 2 t salt and 1 t pepper. Process 10 seconds. With the machine running, drizzle in olive oil until slightly thickened.

Steam zucchini and yellow squash 1 minute and drain. Cook pasta al dente, cool under running water, drain. Toss all ingredients except parmesan cheese with dressing. Pass parmesan cheese to top.

This is my favorite summer recipe. It makes tons! It is great for a meal with some homemade bread. I also omit the chicken and use it as a side dish. For people with vegetable gardens, it uses up those tomatoes and zucchini.

Banana Bread

(This is the best tasting and most moist banana bread I have ever made.--Sharon)

1/2 cup butter or other shortening
1 cup brown sugar
3 beaten eggs
4 ripe bananas, mashed
2 cups flour
1 tsp. salt
4 tsps. baking powder
2/3 cup milk
1 tsp vanilla
Cream together shortening and sugar; add eggs and vanilla and beat well.

With wooden spoon add flour mixture alternately with milk and mix well.
Stir in mashed bananas and mix well. Turn into greased large loaf pan or
two smaller ones. Bake at
350 for about an hour, until brown and well done.

Banana-Date Bread

1 cup chopped dates
1 cup ripe bananas, finely chopped
1/2 cup butter or other shortening
1 cup brown sugar
2 eggs
2 cups flour
2 tsp. baking powder
1/2 tsp. salt.
Mix chopped dates and bananas.
Cream shortening and sugar; add well beaten eggs and mix thoroughly. Add
sifted flour, baking powder and salt. Add date-banana mixture and mix
well. Turn into well greased loaf pan and bake at 350, about an hour,
until brown and well done
