Pumpkin Pie

3 eggs
1 1/2 C pumpkin, cooked
1/3 C honey
1 t cinnamon
1/2 t salt
1/4 t nutmeg
1 1/2 C goat's milk or non instant milk liquid

Beat eggs. Add pumpkin and honey, mixing well. combine spices and salt with pumpkin mixture. Slowly add milk. Pour into prepared 9" or 10" pie shell. Bake at 420 degrees for 15 minutes and then at 325 for 45 minutes.
*this works just fine with canned pumpkin and evaporated milk.

Mulled Cider

Since we don't do caffeine, this is a wonderful winter/holiday drink.

24 oz. cranberry-apple juice
24 oz. cranberry-raspberry juice
1 cup orange juice
1 orange, sliced
10 whole cloves
3 cinnamon sticks

Combine all ingredients in large saucepan. Bring to boil over medium heat, stirring frequently. Reduce heat and simmer for 20 minutes or more. Serve in mugs.
Makes 6-8 servings.

Chicken And Black Bean Tacos

4 boneless, skinless chicken breast halves
4 t fresh lime juice
2-3 T olive oil
4 green onion, thinly sliced
2 large cloves garlic
1 can black beans, drained
1 cup diced tomatoes
1/2 green pepper, diced
1 t salt
1-2 T chopped, fresh cilantro
pinch cayenne
taco shells
1/2 cup shredded cheddar or jack cheese
1/2 cup sour cream

Cube chicken 1/2 inch and coat with lime juice and 2 teaspoons olive oil. In heavy skillet, heat 1T oil on medium high. Add chicken and stir fry for 6 minutes and remove. Add 1 T oil to pan. Saute onion and garlic for 2 minutes til softened. Add beans, tomatoes, pepper. Saute 2 minutes. Gently stir in salt, cilantro and chicken, cook for 1 to 2 minutes. Mixture should be thick and crunchy. Taste, add cayenne and adjust seasoning. Serve in crisp taco shells with cheese and sour cream.
Serves 4-6.

Mini Pizzas

Nonstick cooking spray
1/2 lb. boneless, skinless chicken breast, cubed 1/2 inch
1/2 cup thinly sliced red bell pepper
1/2 cup sliced mushrooms
1/2 cup thinly sliced red onion
2 cloves garlic, minced
1 t dried basil leaves
1/2 t dried oregano
1 cup fresh baby spinach
6 mini pita breads
1/2 cup shredded part skim mozzarella cheese
parmesan cheese

Heat oven to 475 degrees. Spray skillet with cooking spray. Heat over medium heat. Add chicken. Cook and stir 6 minutes or until browned. Remove. Spray skillet again. Add bell pepper, mushrooms, onion, garlic, basil and oregano. Cook and stir 5 -7 minutes. Return chicken to skillet. Remove from heat. Place spinach on top of pita bread. Divide chicken and vegetable evenly over chicken. Sprinkle with cheese. Bake 7-10 minutes or until cheese is melted.
